His hospitality career has spanned the globe.
Started working behind the stick at the Kitchen Night Club in Dublin (owned by Bono & The Edge, U2). Took another step in the hospitality direction and also worked as the Maitre'D of The Tea Room at The Clarence Hotel Dublin (also owned by Bono and The Edge, U2).
Decided to pack his bags to go on travelling adventure of Asia and Australia, finding work along the way at the once prestigious Grand Pacific Blue Room & Tattler speakeasy located in Sydney.
While in Australia he went on to study wine in Melbourne and worked as an apprentice sommelier at Cecconi’s Restaurant in The Crown Casino. Before making his way across the pacific and landing in the Big Apple working at the landmarked “The Plaza Hotel”, Keith McNally’s Minetta Tavern and The Nomad Hotel.
He considers Shuko his home.
